La Cornue Hood Filter Care for Efficiency and Safety

A hood pulls cooking air through a filter, past the fan, and out through the duct, or through carbon filters back into the room on recirculating setups. The grease filter catches the greasy part of that air so less of it reaches the fan and duct. A loaded filter restricts airflow, so a hood that seems weak is often asking for filter cleaning first. The CornuFe manual says to clean fans frequently so grease does not build up on the fan or filter, and the G4 range manual says to clean hoods frequently.

The CornuFe hood collection manual, which covers the Cascade, Euclid, Marquee, and Loge hoods, says to clean the stainless baffle filters regularly and more often with heavy use. It does not set a number of days. The Chateau motorized hood manual gives two reference points: a controller signal and a time. After 30 hours of running, the controller flashes all six indicators to signal that the grease filters need cleaning, and the owner resets the signal with RUN ON TIMER. The same manual says to clean grease filters by dishwasher or hot detergent water every two months or sooner.

Whichever hood you own, your own manual has the right interval. Cooking style matters, since searing and frying load a filter faster than boiling.

1. Turn the hood off and let the lights and fan stop. Wait for the filter area to cool if the range has been in use.
2. Remove the filters as your manual shows, supporting them so they do not drop onto the cooktop.
3. Wash them in the dishwasher, detergent inlet holes facing up on the CornuFe baffle filters, or in hot detergent water as the Chateau manual allows.
4. Let them dry completely before reinstalling. The CornuFe manual stresses full drying.
5. Reinstall and, if your Chateau hood showed the cleaning signal, reset it with RUN ON TIMER as described.

Recirculating Chateau hoods use HP4 carbon filters. The manual says they are washed in the dishwasher and then oven-dried for one hour at a maximum of 200 F (90 C), and that they are consumables. They apply only to recirculating setups. Brass trim needs different care. The CornuFe manual says brass develops a patina and fingerprints can etch permanently, so handle it with gloves and clean it only with a microfiber cloth and ammonia-free Windex or Brasso. Brass trim is not covered by the warranty. Do not carry that cleaning routine over to the filters.

Clean filters should return normal performance on a hood that was only loaded with grease. If suction is still weak, the CornuFe manual points to ducting: undersized or improperly installed ducts cause static pressure, rattling, noise, and inadequate ventilation, and the run should be short, direct, with few elbows and rigid metal only. Duct problems sit behind the wall and are not a filter task. A hood that will not respond may have a different cause. On the Chateau hood, the manual suggests checking power, the internal latching red reset switch behind the grease filter, and the remote battery. Built-in LEDs are not user-replaceable.

Turn the hood on for high heat or flambe, as the CornuFe manual advises, but do not flambe under the Chateau hood, which the manual specifically excludes. Keep at least 24 inches between the bottom of a CornuFe hood and the cooking surface, per that manual.

Filters are one part of a wider airflow picture. The Chateau hood manual notes that strong extraction can create negative pressure in the room, which can affect fuel-burning appliances, and says to provide make-up air or avoid running the hood and those appliances together if in doubt. A clean filter keeps the hood doing the job it was installed to do, but it does not settle questions about make-up air. If the room feels drafty or the hood seems to pull against a closed door, raise that with the installer or at booking, and do not alter vents or ducts yourself.

How often should I clean the filters?

The Chateau manual says every two months or sooner. The CornuFe manual says regularly, and more often with heavy use. Follow the schedule in your own manual.

Can the filters go in the dishwasher?

Both manuals allow it, with the CornuFe detergent inlet holes facing up. Dry them fully before reinstalling.

Why did all the indicators flash?

On the Chateau motorized hood, that is the signal that 30 hours of running have passed. Clean the filters and reset it with RUN ON TIMER.
